Essentials for the Carribean kitchen are the island specific fruits and vegetables; this may be Plantains, Bananas, which are not sweet, Ackee, a fruit, reputedly brought with the "Bounty" from West Africa, or Yam, sort of a potato. All are hard to obtain here in Switzerland in special shops and never in supermarkets. But also for this important flavouring problem Beatrice and Chester Simon found an unconventional solution: At their stopovers the Trinidad BWIA Airline crews have fun, to supply the "Nutmeg" with fresh fruits and vegetables from the Cribbean. That way it is possible to offer the dishes to absolutely normal prices. |
